A small portion of our harvest goes immediately from press to bottle foregoing the usual settling period. The result is a wonderfully fresh olive oil with a beautiful green color and because it is rich in polyphenols (the healthy stuff!) has a strong peppery finish. Olio Nuovo is only available for a short time and because it has not been allowed to settle please consume within several months.
